Blended Raspberry Chia Pudding 💕

This Blended Raspberry Chia Pudding recipe will get you blitzing chia and frozen raspberries for a smooth batch of delicious chia pudding to last you all week!

Ingredients:⁠

1 can light (or regular) coconut milk⁠
8 tbsp Mamma Chia Organic Chia Seeds⁠
1 tsp vanilla extract⁠
2 tbsp maple syrup⁠
1-2 cups frozen raspberries⁠
toppings: coconut, fruit, granola or nut butter⁠

Directions:⁠

In a tupperware, stir together the chia seeds, coconut milk, vanilla and maple syrup. let sit overnight in the fridge, then blend with frozen berries (add 1-2 tbsp water if needed). Top with your favorites toppings and enjoy!⁠

5 cups soy milk ⁠

Crushed gluten free graham crackers ⁠

Directions:

Mix soy milk, oats, chia seeds, lime juice, lime zest, and maple syrup and divide into 5 mason jars. Refrigerate overnight.⁠ Before serving, add crushed graham crackers on top.

Lemon Chia Seed Muffins 🍋

These Lemon Chia Seed Muffins from @deja_crissss⁠ are golden and popping with nutrients from organic chia.

Ingredients: ⁠

1ž cups (218.75 g) all purpose flour⁠
1½ tsp baking powder⁠
½ tsp baking soda⁠
½ tsp salt⁠
2½ tbsp Mamma Chia Organic Black Chia Seeds⁠
7 tbsp unsalted butter melted⁠
ž cup plus 2 tablespoons granulated sugar⁠
1ž tbsp lemon zest⁠
1½ tbsp lemon juice⁠
1 large egg room temperature⁠
1 cup sour cream or Greek yogurt, room temperature⁠
1 tsp vanilla extract⁠
Extra lemon zest about 1/4 of a lemon, optional, for the topping⁠
Turbinado sugar (optional, about 1½
tablespoons, for the topping⁠)⁠

Lemon Icing⁠: ⁠

½ cup powdered sugar⁠
1 tbsp lemon juice

Directions:

1. Preheat oven to 375 F.⁠ Line a muffin tin with cupcake liners.⁠
2. In a large bowl whisk to combine the flour, baking powder, baking soda, chia seeds, sugar, lemon zest and salt.⁠
3. In a medium sized bowl, add the melted butter, sour cream, vanilla extract, egg, and lemon juice. Whisk to combine.⁠
4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.⁠ Do not over mix! (The cupcakes will be filled to the rim with batter). ⁠
5. Mix the extra lemon zest and turbinado sugar together in a small bowl and top the muffins with it.⁠
6. Bake 15-18 minutes or until a toothpick comes out without wet crumbs when inserted in the middle of a muffin.⁠
7. Let cool in tin for 5-10 minutes then transfer muffins to a wire rack to cool completely. ⁠
8. In a medium sized bowl, stir together the powdered sugar and the lemon juice. Add up to a half tablespoon more lemon juice if icing is too thick. Spread or drizzle over the cooled muffins.
