Spooktacular Halloween Treats with the Magic of Chia! 🔼✹

Haunted Swamp Breakfast Bowl⁠

Ingredients:

  • 1/3 cup black sesame oatmeal ⁠
  • 1 1/3 cup plant-based milk or milk of choice
  • 1 tsp matcha powder ⁠
  • 2 tsp maple syrup⁠
  • 1/2 tsp vanilla extract⁠
  • 1/4 cup Mamma Chia Organic Black Chia Seeds

Directions:

1) In a jar or container, stir together the oatmeal and 1/3 cup milk.⁠ Cover and refrigerate at least 4 hours or overnight.⁠

2) Warm a 1/4 cup of the milk.⁠

3) Add matcha to a jar. Pour warm milk over the matcha and whisk until well combined.⁠

4) Add the remaining chia pudding ingredients to the jar and whisk together.⁠ Let mixture sit for 10 minutes.⁠

5) Stir to break up any clumps. Cover and refrigerate for 4 hours or overnight.⁠

6) Alternate adding spoonfuls of oatmeal and chia pudding to a bowl. Using a chopstick or spoon handle, gently swirl the oats and chia pudding together.⁠ Top with candy eyes!⁠

Chia Mummy Balls

Ingredients:

  • 2 tbsp chia seeds Mamma Chia Organic Black Chia Seeds
  • 1 1/2 cups gluten-free rolled oats
  • 1/2 cup pumpkin purĂ©e (or peanut butter)
  • 1/4 cup maple syrup (or honey)
  • 1 tsp pumpkin pie spice or vanilla extract
  • Pinch of salt
  • White chocolate chips
  • Small chocolate chips (for eyes)

Directions:

1) In a large bowl, mix the oats, pumpkin purée (or peanut butter), maple syrup, chia seeds, spice (or vanilla), and salt.

2) Refrigerate the mixture for about 30 minutes to make it easier to roll.

3) Roll the mixture into 1-inch balls. If it's too wet, add a few more oats.

4) Place the balls on a parchment-lined baking sheet and chill them in the fridge or freezer for another 10 to 15 minutes to firm up.

5) Melt the white chocolate chips.

6) Using a fork or a small spoon, drizzle thin lines of melted white chocolate over each ball, covering and crisscrossing them to resemble mummy wrappings.

7) Before the chocolate sets, attach two small chocolate chips to the front of each ball to create the eyes.

8) Return the balls to the refrigerator until the chocolate is fully set. Once the chocolate is firm, they're ready to enjoy!

 

Savory Stuffed Jack-O-Lantern Bell Peppers

Ingredients:

  • 4 organic bell peppers (preferably large and orange!)
  • 1 cup organic quinoa
  • 1 cup organic rice
  • 2 cups vegetable stock (or water)
  • 2 tsp cumin powder
  • 1 1/2 tsp chili powder
  • 1 1/2 tsp garlic powder
  • 1 15-ounce can organic black beans (drained)
  • 1 cup organic whole kernel corn
  • 1 tsp vegetable or olive oil
  • 1 tbsp Mamma Chia Organic Black Chia Seeds
  • Optional toppings: salsa, lime juice, avocado, cilantro, diced red onion


Directions:

1) Cook quinoa and rice with vegetable stock in a saucepan. Bring to a boil over high heat. Once boiling, reduce heat, cover, and simmer until all liquid is absorbed.

2) Hollow out your bell peppers with a fork or spoon and the careful cut jack-o-lantern designs (eyes, nose, mouth) however you like! You can then keep them fresh or lightly brush with vegetable or olive oil and cook in the oven at 357° F for 10 minutes.

3) Add cooked quinoa and rice mix into a bowl and mix in the seasonings, black beans, corn and Organic Black Chia Seeds.

4) Scoop the final mix into the bell peppers and serve with toppings of choice!
