Vanilla Pumpkin Chia Pudding Spice Bread 🍞
Dry ingredients:
🥄1 bag Vanilla Bean Chia Pudding Mix
🥄2 cups all purpose flour
🥄1/2 cup brown sugar
🥄1/2 cup vanilla yogurt
🥄1 tsp baking soda
🥄1 1/2 tsp cinnamon
🥄1/2 tsp nutmeg
🥄1/2 tsp pumpkin spice
🥄1/2 tsp salt
Wet ingredients:
🥄5 eggs
🥄1/2 cup vegetable oil
🥄1/2 cup vanilla almond milk
🥄1 15oz can pumpkin purée
Mix all wet ingredients together and set aside. Mix all dry ingredients together and slowly incorporate into wet ingredients. Mix well and place mixture into a non-stick loaf pan that has been lightly sprayed with cooking oil. Bake at 350 degrees for 1 hour.
Dark Chocolate Peppermint Chia Pudding 🍫
Ingredients:
- 1 bag Dark Chocolate Chia Pudding Mix
- 2½ cups milk of choice
- 1 cup granulated sugar
- ½ cup water
- 1 teaspoon peppermint extract
- Whipped cream (optional)
- Peppermint candy cane (optional)
- Dark chocolate shavings (optional)
- In a small saucepan over medium heat, combine granulated sugar, water and peppermint extract and bring to a soft boil, cooking and stirring until the sugar is dissolved. Then transfer the mixture to a glass bowl to cool to room temperature and store in the fridge.
- To prepare the chia pudding, whisk the Chia Pudding Mix, milk of choice and peppermint simple syrup together and refrigerate overnight.
- Before enjoying, we suggest topping with whipped cream, dark chocolate shavings, and crushed peppermint!
